Homemade Couscous Recipe
You will need
- - 1 stick of cinnamon;
- - 1 bay leaf;
- - 1 kilogram of semolina;
- - 1 teaspoon salt;
- - 1 ½ tablespoon flour;
- - 250 ml of vegetable oil.
Pour about 250 ml of warm boiled water into the sprayer. Mix the semolina with salt and flour in a wide bowl. From the sprayer spray the mixture with liquid and mix with a circular motion of the palms. The semolina should be evenly moistened and rolled into small balls.
Put the semolina in a sieve with holes about 0.25 mm in diameter and set it over another bowl. Using a spoon or spatula, wipe wet semolina through a sieve.
Boil a few liters of water and put cinnamon and bay leaf in them. Place special dishes above the rising steam. Steam semolina for 15 minutes, stirring constantly, preventing it from forming large lumps. Cover and cook for about 30 minutes, stirring every 5-7.
Put the couscous from semolina in a bowl, mix with butter and gently fluff with a fork. Thus obtained product can be kept in the refrigerator, covered with cling film, 2-3 days.
Return the couscous to the steamer again and cook another 15 minutes, then rub it again through a colander. Homemade couscous ready.
